Mixed Vegetables Chutney @ Thogayal



Hi all.. After long time posting here in this blog. Meanwhile I tried some recipes which would be updated soon. Today gonna share a recipe called 'Mixed Vegetable Chutney @ Thogayal' which I have heard about few months back, but tried it just today afternoon.

Mixed Vegetable Chutney @ Thogayal :











Ingredients :

Mixed Veggies
(Carrot, Capsicum, Beetroot, Cabbage,
 Ivy gourd/gentleman's toes/kovakkai)
Oil - 1-1/2 tsp( 1/2 tsp for spices + 1/2 tsp for veggies + 1/2 tsp to saute)    
Cumin seeds      -  1 tsp
Red chili             -  3
Green Chili         -  1
Urad dal             -  2 tsp
Channa dal         -  2 tsp
Grated Coconut  - 3 tsp
Ginger                 - small piece
Garlic                  - 4 or 5
Tamarind             - a small bit
Asafoetida           - 1/4 tsp
Turmeric powder - 1/4 tsp
Curry leaves,
Coriander leaves,
Salt to taste                      

Method :

Take a pan, add a 1/2 tsp of oil. Once the oil heats up, add urad dal, cumin seeds, channa dal, red chilli, green chili, curry leaves and grated coconut. Fry it well. Then let it cool. Meanwhile, take another pan, add 1/2 tsp of oil, once it heats up add all the vegetables and saute it for a while along with turmeric powder. Now take the mixer jar, add this vegetable mix and the previously fried mixture to the jar along with tamarind, ginger, garlic, asafoetida, coriander leaves, salt. Grind it well so that it comes to a paste texture. Now add 1/2 tsp of oil to a small pan, add mustard seeds let it splutter, then add urad dal , fry it and add to the chutney.

Now the Mixed Vegetable Chutney @ Thogayal is ready to serve with rice, chapati or idli/dosa !!!

Lady's Finger Masala Fry


Lady's finger :

Lady's finger has many names like Okra, Bhindi or gumbo. It is widely cultivated around the world. They are native to South Asian countries and West Africa. The word Okra is mostly used in US. Lady's finger is a popular vegetable because of its healthy food values. It is said that Lady's finger is high in fiber, vitamin C, folate and high in antioxidants. It is also believed to contain both calcium and potassium.

Nutritional and medicinal values :

Lady's finger is believed to be helpful in weight loss. The fiber solution in this vegetable is said to be helpful in lowering bad cholesterol and hence it prevents heart diseases. It is said that it helps in controlling blood sugar levels. It is believed to be useful in treating and avoiding Anemia since this veggie is also rich in iron. It is also helps to improve immunity and eyesight. Between all these values , most importantly it is believed to prevent colon cancer.

Here sharing a recipe of lady's finger which I tried it this afternoon after I came through about it on Internet.


Lady's finger Masala Fry :

Ingredients :

Lady's finger  -  12
Shallots - 6 to 7
Garlic - 4
Peanuts - 2 tsp
Coriander seeds - 2 tsp
Cumin seeds - 1 tsp
Dry Red chili - 3
Salt to taste
Oil - 1 and 1/2 tsp

For garnishing :
Coriander leaves










Method :

Take a pan, add the cumin seeds and coriander seeds and fry it well. Then add dry red chilies to it and fry it for a while. Now let it cool for few minutes. Then grind this mixture along with garlic and peanuts into a powder. Now the masala is ready.

Then take a separate pan, add 1 tsp oil to it. Once the oil heats up add chopped shallots and fry it until it turns to golden brown color. Then add sliced or triangularly chopped lady's finger along with salt and fry it for a while. Then add this masala mixture, 1/2 tsp oil to it and cook it for 5 mins until the lady's finger becomes crispy. Serve hot.. !!!
